On a sunny fall day in New England, Ron Sansone of Spoke + Spy Ciderworks of Middletown, CT joined us out back at Tea Guys in Whately, MA for some improvisational blending that resulted in CHAI & DRY, a sidra and tea blend aimed at capturing in a can a favorite refreshment I make at home with sidra, black tea and angostura bitters. (Actually, we made it even better.)
Ciders of Spain laid down the bass line with our award winning wild yeast Sidra Natural Riestra. Drawing from Oliver Rich’s vast collection of teas, we chose this aromatic, spiced chai blend for our first release. For a hint of sweetness we use a touch of freshly pressed cider juice blend from nearby Pine Hill Orchard, marking our common roots in apple-rich Connecticut River Valley.
