A rare virtuoso performance in world cider making.
A special blend of 14 apple varieties is chilled to arrest primary fermentation just as the malolactic phase starts and with just the right level of residual sugar to finish fermenting ever-so-slowly in 50 gallon oak and chestnut casks at a cool temperature for eight months. It is then blended favoring the chestnut batches and bottled off-dry, as a full-bodied wine-like drink with depth and complexity and a surprisingly creamy mouthfeel for its bright clarity.
